Gingerbread Pancakes

A festive pancake to chase away any cold winter day.

Gluten-Free Gingerbread Pancakes


  • 1 cup water milk or dairy-free alternative
  • 1/4 cup oil
  • 1/4 cup molasses
  • 1 large egg
  • 2 TBSP sugar
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 2 tsp baking powder
  • 1 cups Mehl's Gluten-Free All-Purpose Flour


  1. Mix all ingredients in a mixing bowl until dough gets nice and smooth.

  2. Spray bottom of large skillet or frying pan and heat to medium - medium high heat.

  3. Place scoop of batter on pan, flip when you start to see lots of bubbles on top (generally around two minutes)

  4. Top with your favorite syrup and have a merry, merry breakfast!
