Ingredients
Cake
- 1 1/2 cups water
- 1 cup oil
- 3 large eggs
- 2 Tablespoons baking powder
- 3 cups Mehl's Gluten-Free All-Purpose Flour
Filling
- 2 Tablespoons Mehl's Gluten-Free All-Purpose Flour
- 1 1/4 cups sugar
- 1 Tablespoon vanilla
- 1 3/4 cups loosely packed brown sugar
- 2 teaspoons cinnamon
- 1/2 cup melted butter or margarine
Instructions

Preheat oven to 375 degrees.
Prepare two mixing bowls.

In first mixing bowl add water, oil, egg, baking powder, flour, sugar and extracts. Mix well until nice and creamy with no lumps.

Oil a tall 9" x 13" pan and pour half the batter in and spread evenly.

In second mixing bowl place brown sugar and cinnamon and whisk together really well.

Sprinkle half of brown sugar-cinnamon mixture evenly over cake batter in pan.

Pour the rest of the batter over the brown sugar and cinnamon and spread so that it covers the dry mixture.

Sprinkle the remaining dry mixture over the top of the batter. Melt the margarine or butter and pour evenly over brown sugar and cinnamon.

Bake the cake for 30 - 45 minutes or until knife or toothpick comes out clean.
