Gluten-Free Coffee Cake

A tasty old-fashioned treat perfect for the holidays (or anytime for that matter). Mehl's Gluten-Free Flour makes this so good and tasty you can serve it to everyone, whether they eat gluten-free or not, and your guests and loved ones will be very appreciative of the cook.

  • 2 Tablespoons Mehl's Gluten-Free All-Purpose Flour
  • 1 1/4 cups sugar
  • 1 Tablespoon vanilla
  • 1 3/4 cups loosely packed brown sugar
  • 2 teaspoons cinnamon
  • 1/2 cup melted butter or margarine

Instructions

  1. Preheat oven to 375 degrees.

    Prepare two mixing bowls.

  2. In first mixing bowl add water, oil, egg, baking powder, flour, sugar and extracts. Mix well until nice and creamy with no lumps.
  3. Oil a tall 9" x 13" pan and pour half the batter in and spread evenly.
  4. In second mixing bowl place brown sugar and cinnamon and whisk together really well.
  5. Sprinkle half of brown sugar-cinnamon mixture evenly over cake batter in pan.
  6. Pour the rest of the batter over the brown sugar and cinnamon and spread so that it covers the dry mixture.
  7. Sprinkle the remaining dry mixture over the top of the batter. Melt the margarine or butter and pour evenly over brown sugar and cinnamon.
  8. Bake the cake for 30 - 45 minutes or until knife or toothpick comes out clean.
