Chicken Cordon Bleu Sauce

This is a great sauce to serve over cooked chicken breasts or making cold pasta salads, spreading on sandwiches, and making incredible tasty pizzas and flat bread creations. With a primary chicken taste with hint of ham you get that authentic “Chicken Cordon Bleu” taste that so artfully combines chicken, ham and butter.

Gluten-Free Chicken Cordon Bleu Sauce

This is a great sauce for making cold pasta salads, spreading on sandwiches, and making incredible tasty pizzas and flat bread creations.

Servings 1 quart

Ingredients

  • 2 cups condensed chicken broth
  • ¼ cup butter or butter alternative
  • 1/4 cup Mehl's Gluten-Free All-Purpose Flour
  • 4 slices thin gluten-free ham slices diced into small cubes, about 1/8 inch thick
  • 8 oz. swiss cheese diced into ¼ inch cubes
  • 8 oz. cream cheese
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon finely ground black pepper

Instructions

  1. Place chicken broth, butter, and flour in soup pan and mix until flour is completely dissolved with no visible lumps, and heat to boiling, stirring often. Lower heat to about medium-low.

  2. Add garlic, onion and pepper and cream cheese. Use a spoon or thin whisk to stir until cream cheese is blended in nicely.

  3. Add the swiss cheese and stir regularly until the stringiness of the cheese disappears and you have a nice creamy mixture.

  4. Use immediately or let cool and use spatula to put into a bowl or container for storage until ready to use. Keep refrigerated.

Recipe Notes

To make a dairy-free version:

  • Increase broth to 2 1/2 cups
  • Substitute butter for dairy-free butter alternative
  • Substitute the cream cheese for Toffuti or Daiya Cream Cheese (or your favorite dairy-free cream cheese substitute)

Serving Ideas:

Pizza:

Spread even over pizza crust, add cheese or dairy-free cheese alternative, top with cooked chicken and your favorite pizza veggies, and bake until crust is done and cheese is browned. Top with fresh diced spinach or romaine for a healthy, tasty and gorgeous addition.

Cold pasta:

Boil up a pound of your favorite gluten-free pasta and add the sauce and your favorite pasta salad veggies (like celery, radish, olive, onion) until it has that nice pasta salad look (add sauce to your taste, but try not and add too much!)

Sandwiches:

Toast up some Mehl's Gluten-free Premium White Sandwich Bread or Bagels or Buns, spread some of this sauce on one side, add your favorite meat(s) and veggies, and prepare for a real gluten-free treat!
