Gluten-Free English Scones

A classic English favorite, scones are a staple breakfast and appetizer treat folks have been enjoying for centuries now. We're pleased to bring you a gluten-free version of the traditional English scone developing using our own Mehl's Gluten-Free Flour!

Ingredients

  • 8 TBSP shortening or dairy-free margarine frozen
  • 1/2 cup sour cream or dairy-free alternative
  • 2 large eggs
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups Mehl's Gluten-Free All-Purpose Flour

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Place all dry ingredients (flour, sugar, baking powder and soda) into mixing bowl and mix well. 

    Place chunks of frozen butter (or margarine or shortening) onto top of mixed dry ingredients. Use your hands to work in the butter.

  3. In a small side bowl, whisk the sour cream (or alternative) with the eggs until smooth.
  4. Using a fork stir the sour cream mixture into the flour mixture until large dough clumps form. (The dough will be sticky, and it may seem to be a little short of liquid but keep pressing and it will all work out beautifully).
  5. Make dough into about 1 1/2" balls and place onto baking sheet about 1" apart.
  6. Bake for 12 to 15 minutes, until toothpick or knife comes out clean.
  7. Let cool and enjoy!

Recipe Notes

Variations:

Add chocolate chip, raisins, a teaspoon of cinnamon, walnuts or almonds, hazelnuts or your favorites

Serving Suggestions:

Add sliced strawberry and whipped cream, bananas and whipped cream, whipped cream and chocolate spreads, or your favorite topping(s)
