Gluten-Free Pumpkin Pancakes

Instructions

  1. Preheat nonstick pan or griddle to medium high heat.

  2. Pour all ingredients into mixing bowl. Mix until smooth; Approx. 2 minutes.

  3. Oil pan and scoop about 1/4 cup of batter onto pan per pancake. Cook each side about 2-3 minutes.

  4. Top with your favorite topping and enjoy!
