A perfect fall breakfast treat you won’t believe is gluten-free.
Gluten-Free Pumpkin Pancakes
- 1 2/3 cup water
- 3 TBSP Oil
- 1/2 cup pumpkin puree
- 2 cups Mehl's Gluten-Free Pancake Mix
- 1/2 tsp Cinnamon
- 1/2 tsp ginger
Preheat nonstick pan or griddle to medium high heat.
Pour all ingredients into mixing bowl. Mix until smooth; Approx. 2 minutes.
Oil pan and scoop about 1/4 cup of batter onto pan per pancake. Cook each side about 2-3 minutes.
Top with your favorite topping and enjoy!
