Great Grandma Anne’s Rhubarb Crisp
Great Grandma Anne's Gluten-Free Rhubarb Crisp
Ingredients
Crumb Mixture:
- 2 cups brown sugar
- 2 cups Mehl's Gluten-Free All-Purpose Flour
- 1 1/2 cups oatmeal
- 1 cup butter melted
- 2 tsp cinnamon
- 1 cup sugar
Filling:
- 4 cups chopped rhubarb
- 1 cup water
- 2 TBSP corn starch
- 1 TBSP vanilla
Instructions

Mix together brown sugar, flour, butter, oatmeal, and cinnamon.

Press half of the crumb mixture into the bottom of a 9X9 pan.

Sprinkle rhubarb on top of the pressed crumb mixture.

Boil the sugar, water, corn starch, and vanilla until thick. Pour over rhubarb.

Sprinkle with the remaining crumb mixture.

Bake at 350F for 10 to 15 minutes. Enjoy!
