Gluten-Free Roll Out Sugar Cookies
- 1 cup shortening
- 2 TBSP water
- 1 large large egg
- 3/4 cup sugar
- 1 tsp vanilla
- 1 tsp almond extract or imitation almond
- 1 1/2 tsp baking powder
- 1 3/4 cups Mehl's Gluten-Free All-Purpose Flour
- sheet of wax paper or plastic wrap
- 1/3 cup gluten-free starch for rolling out
Add all ingredients to mixing bowl.
Mix well until dough gets nice and smooth.
Place a sheet of wax paper or plastic wrap on open counter space, and sprinkle starch on surface.
Place cookie dough on starch, shape into a rough rectangle, sprinkle starch over
Use cutout to make cookie shapes, and use a spatula to place them onto a nonstick baking sheet. Take extra dough and keep rolling out until dough is used up.
Optional: sprinkle sugar or cinnamon sugar over top of cookies.
Bake at 375 degrees for 12-14 minutes.
Remove from oven and let cool. Once cooled you can frost or just eat as they are!
