Gluten-Free Zucchini Bread

Ingredients

  • 3 cups Mehl's Gluten-Free All-Purpose Flour
  • 2 teaspoons cinnamon
  • 4 teaspoons baking powder
  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups shredded zucchini

Instructions

  1. Preheat oven to 375 degrees Fahrenheit

  2. Combine all ingredients into a large bowl and mix until well blended.

  3. Split batter evenly into two loaf pans.

  4. Bake for 40 minutes. Test with a toothpick or knife in middle. When it comes out clean, it is done.

  5. After taking out of the oven, gently remove from pan and cool before slicing.
