Zucchini Bread
Gluten-Free Zucchini Bread
Cook Time 40 minutes
Servings 2 loaves
Ingredients
- 3 cups Mehl's Gluten-Free All-Purpose Flour
- 2 teaspoons cinnamon
- 4 teaspoons baking powder
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 2 cups shredded zucchini
Instructions

Preheat oven to 375 degrees Fahrenheit

Combine all ingredients into a large bowl and mix until well blended.

Split batter evenly into two loaf pans.

Bake for 40 minutes. Test with a toothpick or knife in middle. When it comes out clean, it is done.

After taking out of the oven, gently remove from pan and cool before slicing.
